TGIF! I am slacking at work, so I thought I would give a quick update and share some thoughts on this sunny day!
First, I haven't shared my weightloss success with everyone. I have lost 25 lbs. since January. I'm still a work in progress, and I would like to lose another 20lbs by the end of summer. It should be easily done, because I spend most of the time outside in the garden, walking the dogs, etc. (Anywhere but the house, because I do not have air conditioning!)
This leads me to my second thing I want to share...my mini garden! Chris and
I built this over Memorial Day weekend. Strawberries, tomatoes, eggplant, basil, yellow summer squash, and butternut squash. YUM. I can't wait for it all to grow!Last year, I had a larger community garden about 10 minutes from my house. It was kind of a pain to water and get out there often enough, so I sacrificed size for the convenience of my own yard.
I have have a new addition! A dairy cow of my very own! Chris, the boyfriend, has recently sold all of his dairy cows, except for one lucky cow that I convinced him to keep, because she was my favorite!
Her name is Penelope. :)
Now the stipulation of me keeping her is a tid bit tricky. I have to milk her everyday. e.v.e.r.y.d.a.y. 365 days a year. So far, so good, extended vacations very unlikely in the near future.I have been reading up on how to make cheese, butter, yogurt, cream, and other dairy delights. I ordered cheese making supplies today! I am hoping that the products she will bear will be well worth the work and effort I am going to have to put in to keep her!
Needless to say more; I am super excited.
Love everything about this post! I want to meet Penelope so bad. Butternut squash sounds amazing. Keep up the good work!
