So I just made this White Chicken Chili and it was so good that I thought I would share the recipe with you ladies seeing as how most of you are also experiencing cold weather and chili is one of the best cold weather foods ever!! I found the recipe on www.eatbetteramerica.com which has a lot of healthier recipe ideas- and if you read through the comments you can see how to manipulate the original recipe to make it better!
But here is how I made it:
2 breasts of chicken boiled in 4 cups of water (rather than using store bought broth, I boil the chicken and just use the broth from that- if you do not think your broth is flavorfull enough you can add a chicken builion cube)
2 zucchinis, chopped into slices then quatered
1 jalapeno chopped
1 medium yellow onion
3 cloves of garlic chopped
2 carrots chopped
2 cans of great northern beans, drained (any pinto beans will sufice)
1 can corn, dained (or 3 ears with kernels cut off)
1 can green chilis
1.5 tsp dried orengano leaves
1 tsp cumin
1/4 tsp red pepper (caynne)
Mix it all on the stove or in a slow cooker, it was delicious as is, the website said to add cheese and sour cream for added flavor. It is for sure something I will make again, Jeremy said he loved it too!
It is getting colder again here, we are not supposed to be above 20 until about Thursday :( We are also supposed to get a rather large winter storm from tonight through Monday. So hopefully we will get some good snow because it has pretty melted. I am also on the job hunt again, as my current contract ends in 4 weeks and I cannot wait. I love Colorado, just not Holyoke. It is looking like Colorado Springs will be my next home, and that is ok. It is about an hour or so south of Denver. There is a military base there, and it is a real city! That is the part that excites me the most! Hopefully in the next week or so I will have more information.
